Easy Lemon Bars

1 14- ounce can sweetened condensed milk
2 Tablespoons grated lemon zest
Ã'¼ cup lemon juice
3 cups all-purpose flour
1 cup sugar
Ã'¾ cup softened butter
Ã'¼ tsp salt
Ã'½ cup sweetened salt flaked coconut
Preheat the oven to 375* Grease a 13 x 9x2 inch baking pan.
Mix the milk, lemon zest, and lemon juice until thick.
Mix the flour, sugar, butter and salt until the mixture is crumbly (I use a Cuisinart). Reserve 1-1/2 cups and press the remainder firmly into the prepared pan. Spoon the milk mixture over the top and spread carefully to cover.
Mix the coconut into the reserved flour mixture. Sprinkle this evenly over the batter and press lightly. Bake for 25- 30 minutes or until golden brown.
Cool on a wire rack and cut into bars. Makes 36 bars.
